  • Daisy, Just got into your website as there was a link from survivalblog.com which I read daily. I have thoroughly enjoyed reading your site. I tried to see if you have any articles on cheese making but you did not. We have a Dexter cow on our farm and I have recently started making cheese. Mozzarella and ricotta were the first, which are the easiest to make. I am next going to tackle the task of farmhouse cheddar. If you have any articles or recipes on making cheddar I would really appreciate it.

    Each Winter I give myself three “challenges” to learn while my garden is sleeping. This year my challenges are 1) Cheese making 2) Tortillas, both corn and flour, and 3) Pie crusts (really good ones). I am well on my way with the cheese. For Christmas this year I made lasagna with the ricotta and mozzarella I had made and my family all said it was the best I have ever made.

    • Thank you very much for the kind words! Cheesemaking is definitely on my list. I’m planning to try it during my pantry challenge in January. I’m starting simply, with mozzarella, like you mentioned. I’m also working on yogurt – I haven’t had a lot of success yet, but necessity is the mother of not only invention, but determination! 🙂

      I’ve done okay with tortillas but I’d really like to get an authentic tortilla press to make it a little easier.
